Mad Hatter Tea

Summer Punch
Suitable for children
Ingredients
- 600 ml (1pt) Boiling water
- 25 ml (1½ level tbsps) Strong black tea
- 175 g (6 oz) Sugar
- 150 ml (¼ pt) Lemon squash
- 300 ml (½ pt) Orange squash
- Ice cubes
- 50 g (2 oz) Strawberries sliced
Assorted Fresh Fruit
Method
1. Pour water onto the loose tea,
allow to infuse for 3 - 4 minutes.

Stir
3. Strain into a bowl containing the sugar and again stir until dissolved.
4. Add both the lemon & orange squash. (diluted)
5. To serve pour over the ice cubes into a punch bowl
6. Add sliced fruit lemon, orange, lime, pineapple, Banana and
leaves of mint etc.
7. Simply ENJOY, you'll be surprised how quickly this disappears...
Rumch Punch
Ingredients

1.7 l (3 pt) cold water
-
450 g (1lb) Sugar
-
1 Lemon
-
4 Oranges
-
300 ml (½ pt) Strong tea
-
300 - 600 ml (½-1pt) Rum
Method
1. Put the water and sugar in a pan
2. Stir until sugar is dissolved
3. Bring the pan gently to the boil
4. Add the thinly pared rinds of the lemon and orange
5. Boil for around 5 minutes
6. Remove the pan from the heat add juice of lemon & orange
7. Add tea and rum
8. Strain and serve, hot or cold.
9. Makes about 3 l (5 - 5
¼pt)

Tealoaf Recipe for Mary
Mad Hatter Tealoaf
Soaking time: overnight
Baking time: 1 hour 45 min.
Mad Hatter Tealoaf using a black tea blend produced by the Mad
Hatter Tea Company.
Infused fruits overnight with Mad Hatter tea.
Serve this tea loaf in thick slices just as it is - although you
could also serve it with butter or with a slab of Swaledale or
Cotherstone cheese for that authentic Northern
experience.
Ingredients
- 200 g (7 oz.) raisins
- 270 g (9 oz.) self raising flour
- 75 g (3 oz.) soft brown sugar
- 2 eggs
- 100 g (3 1/2 oz.) currants
- 50 g (2 oz.) glace cherries
- 425 ml / 1- 3/4 cup / 3/4 GB pint freshly made Mad Hatter Tea
- ½ tsp mixed spice
- 2 tbs of strong spirit
Method
1. Weigh out the currants and raisins and place into a large bowl.
Pour on the hot tea; cover the bowl with plastic wrap.
2. Wait for tea to cool add 2 tbs of strong spirit and swish around the fruits in the bowl,
and leave to steep for 12 hours or overnight.
3. The next day, the fruit will be very plump and juicy looking.
Some tea will still remain in the bowl which is fine.
4. Grease a 2 lb. loaf tin and preheat the oven to 150°C / 300°F.
5. Cut the cherries into halves or thirds, depending on size, and
add to the soaked raisins along with the sugar and spice. Stir until
mostly dissolved.
6. Add the eggs and mix well until evenly combined.
7. Scatter the flour over the surface of the mixture. Using a wooden
spoon, start at the centre of the bowl and beat the flour into the
mixture, working your way out towards the edge until everything is
well incorporated.
8. Pour the batter into the prepared tin and bake for 1 hour and 30
– 40 minutes until golden brown on top and a skewer inserted in the
middle comes out relatively clean (it may still be sticky if you hit
a raisin).
9. Allow to cool for 15-20 minutes in the tin before turning out
onto a wire rack to cool completely.

Growers
raise base price of tea
again
Mad Hatter Tea has just had another price hike levelled upon there
products direct from source.
Martin Binks, Managing Director of
Mad Hatter Tea has taken the decision to absorb the cost, in the hope that that
there will not be a further price increase this year.
Mr. Binks said 'It's not just about the source price of Tea, we have
to take into account how much the price of inflation has affected
the people on the ground from the pickers to the blenders, in fact
the base price at the auction has fallen within the last 6 months,
it is the increased cost of transport, storage, employment and
taxation, that has has contributed to this situation. Mad Hatter is
a premium quality Tea, and there will be no compromise on the
quality on my watch'.

Kenyan Tea, Coffee Production to
Rise Due to Torrential Rains

Kenya, the world’s biggest grower of black tea, may see a 10 percent
rise in output of the leaves in January following torrential rains
that have fallen since December, said Peter Kegode, an agricultural
economist.
Tea and coffee require a lot of water and won’t be washed away
because they are deep-rooted, Kegode, an independent economist who
advises sugar, dairy and tea industry associations, said in a phone
interview from Nairobi today. “There has been above-average rain in
tea- and coffee-growing areas. There should be 10 percent increase
in tea production,” he said.
Tea production will increase immediately because the leaves are
picked daily, Kegode said, while this won’t be the case for coffee
as January isn’t its flowering season.

The Cost of Tea is set to hit
an all time high
A box of 80 premium teabags
is already up to a rise of 45.5 per cent on last years prices and
more price hikes are expected across the industry. There has been a world wide
drought in the tea growing districts which has meant that growers
have had to use tea from there reserves to keep the market
satisfied. It has been reported from a reliable source that this
year drought means production can not match this years demand. |
